fish tacos

I have been craving Mexican food. I knew this would happen it was inevitable. There are a few Mexican joints around here but A. We are trying to watch are money and 2. they are not Rio Grande. We had been searching for skirt steak - which is apparently not a local favorite - for awhile and finally found it at WallyWorld. It took us awhile because we normally don't by our perishables there we try to shop the local stores as much as possible. Bot sometimes we get weak because - and I don't know if you know this already so keep it under your hats - Walmart is Cheap! Very cheap, and also important to us they have Selection! Cheap and a Selection - of the temptation.

So any way, as soon as we found out where to score some skirt steak we started planning a fajita event. We decided to do it when Ma and Pat got home from Atlantic City so they could enjoy it also. What we didn't do is snap up the skirt steak as soon as we found it. Big mistake the devils at WallyWorld don't always keep it in stock and they can't tell us when it will be back. ARRRGGGHHH. Yes I know you can make fajitas with chicken or even shrimp but this is my craving so butt out.

So what to do the ladies were invited and the craving was still roaring. My new Domino magazine provided the answer - they had a spread on fish tacos with red cabbage and avocado cream toppings. The side was fresh corn taken of the cob and heated until charred with some scallions thrown in the last 5 minutes. The finally recipe for the meal was for watermelon margaritas, again in the vein of saving some cash I served Corona instead. What is weird is that I haven't ever had fish tacos before but this totally worked. I feel like I can wait now for the flank steak to be in stock again. But I tell you what I am totally buying them out and freezing for later when they do restock.

Tommy is going to talk to the workforce commission today about getting a grant for truck drivers school. Mom is being totally supportive about this plan she only came up with two dire consequences of becoming a truck driver - weight gain and hemorrhoids. Only two that is practically a ringing endorsement for Mom.
